Ingredients
- 200g cooked and peeled prawns
- 6 eggs
- 2 tbsp water
- 1/2 red capsicum, thinly sliced
- 2 spring onions, sliced
- 1 small red chilli, finely sliced, optional
- 1 tbsp vegetable oil
- Black pepper, to taste
- Fresh coriander, optional
How to Cook
- Whisk the eggs and water together. Season with black pepper.
- Heat half the oil in a non-stick frying pan over medium heat.
- Cook the capsicum, spring onion and chilli for 2 to 3 minutes, then remove from the pan.
- Add the remaining oil and pour in the egg mixture.
- Cook gently until the egg is almost set.
- Add the vegetables and cooked prawns to one half of the omelette.
- Fold the omelette over and cook briefly until the prawns are warmed through.
- Serve with fresh coriander, salad or toast if you like.
Simple Tips for a Better Omelette
- Have the filling ready before the eggs go into the pan.
- Keep the heat moderate so the eggs cook without browning too quickly.
- Add the prawns near the end. They are already cooked and only need reheating.
